Chive Blossom Vinegar

Who has chives in their garden? One of the first goodies I get to harvest in the spring. I’m trying out a new vinaigrette using the blossoms.

I picked the tops and added them to a quart jar and filled it with half white vinegar and half apple cider vinegar.

Wait a few weeks until the flavors have blended together. Stain and save in a pretty vinaigrette bottle.

I used this on a fresh foraged salad from the yard using dandelion greens, Creeping Charlie, and some spicy wild garlic mustard. The Creeping Charlie is a herbaceous addition that is really fun to add more flavor to a boring ol' salad! The bees LOVE it!
