Pickled Eggs

Creating a rainbow isn't too hard with eggs. Just dream up what you want them to look like and put it in a jar. It makes eating them fun, not so scary. Pickled eggs for everyone!

Directions

I use a 1 to 1 ratio for vinegar and water to have the correct acidity for preserving. 5%

4 cups apple cider vinegar

4 cups water

1/2 sugar

Slices of beets

Head of garlic split between jars

Whole pepper corns

1 teaspoon of turmeric powder

Fresh dill from the garden

20 hard boiled eggs

Horseradish or jalapeños optional.


Boil the vinegar, water, sugar on the stove until combined.


Prepare the jars

For Red Eggs:

Gently add the eggs to the jar making sure to add the dill and the beets half way up the jar.


For Yellow Eggs:

Add the eggs to the jar, mix in turmeric to the vinegar before adding to the jar.


For Orange Eggs:

Mix the beets and the turmeric together to create the desired orange into the vinegar.


I keep these refrigerated for a couple months tops. Make sure to eat them sooner than later. The flavor will develop in a couple of weeks.


Having friends over to eat them is really fun. I always get a wow out of them. Great for Easter!
